I promised to post new recipes weekly, so I figured I would start with my absolute favorite one, and work my way from there. This banana pancake recipe is delicious and nutritious, and one that one of my best friends sent to me, knowing I would like it. The best part is that you can do whatever toppings you want to change it up, or even change up which spices you use to give it a new feel so that it doesn’t get old. Best part, it is super healthy!
- 2 eggs
- 1/3 cup oats
- 1 banana
- 1-2 tsp baking soda
- 2 tablespoons of flax/chia seed blend or 1 tablespoon chia seeds
- splash vanilla
- spices (I use cinnamon, but pumpkin spice is another yummy option)
- toppings (in this one, I used 1/4 cup of blueberries, and just a tablespoon of sun butter, but you could top with a little maple syrup, peanut butter, you name it!)
You just blend all the ingredients together. If it is too thick, I just add water. If it is too watery, I add a tablespoon of almond flour at a time until desired consistency.
